2 eggs
½ cup safflower oil
1 cup raw sugar
1 ½ teaspoons vanilla
1 cup shredded and drained zucchini
½ cup shredded carrots
1 ½ cups ap flour
2 teaspoons cinnamon
a pinch freshly grated nutmeg
a pinch freshly grated nutmeg
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
½ cup raisins
½ cup dark chocolate chips
Pre-heat oven to 325 degrees F and grease an
8 x 4 metal loaf pan. Mix the first 6 wet ingredients in a bowl. In a separate bowl, sift together dry ingredients. Combine wet and dry mixtures with a fork.
Fold in the dried fruit and chocolate chips. Bake
for 70 minutes cool and enjoy.
