Dressing Pasta
2 garlic cloves 1 lb thin spaghetti
3 tablespoons
soy sauce 2 bell peppers
1 ½ tablespoons
rice vinegar 1
cup cilantro
¼ cup sesame oil 1 cup shelled edamame
2 tablespoons dried hot pepper flakes
¼ cup sesame oil 1 cup shelled edamame

sugar
1/3 cup pasta water
½ cup roasted cashews
1/3 cup pasta water
½ cup roasted cashews
Make the dressing
in a blender. Dice up the bell pepper and put them in the bottom of a large
serving bowl with the edamame. Cook the pasta until it is almost al dente (the
pasta will absorb the dressing and continue to soften). Put the hot pasta over
the peppers allowing the heat from the pasta to steam the peppers and edamame.
Toss in the cilantro and dressing and marinate for at least and hr. serve cold
or at room temp.
