Lava Cakes


¾ cup AP flour
¾ cup unsweetened coco powder
1 ½ teaspoons baking powder
¼ teaspoon of cinnamon
¾ cup raw sugar
2 eggs
½ cup safflower oil
½ cup chopped semi sweet chocolate (about 60%)
1 teaspoon vanilla extract

Preheat oven to 350 degrees F. Sift together dry ingredients. Beat sugar, oil, eggs, and vanilla until combined. Mix the wet ingredients with the dry. If the mixture is too dry add a little hot water. Divide into about 4-6 ramekins depending on the size and bake for 20 minutes at 350 degrees F. These little individual deserts are meant to be melted and gooey in the center. So if you think they are underdone they are probably perfect.
