Green on Green Salad



2 bunched of Kale
1 ripe avocado
1 lemon
¼ cup apple cider vinegar
Sea Salt
Freshly Ground Black Pepper

Wash and dry kale. Remove the tough stalks and tear leaves into bite size pieces. Toss the kale with the Apple cider vinegar and salt with your hands and let it marinate for an hour so the vinegar slightly breaks down the tough kale. In a serving bowl mash the avocado with the lemon juice to make a creamy but light green dressing. Drain any extra vinegar from the kale and toss the kale in with the avocado. Use your hands to make sure all the kale is coated in the avocado mixture. Salt and pepper to taste. Serve cold.
