Maple Spinach Salad


Salad
1 bunch/bag of fresh spinach
2 hard boiled eggs sliced
1/2 cup thinly sliced button mushrooms

Dressing
1/4 cup olive oil
¼ cup red wine vinegar
1 garlic clove minced
2 finely chopped shallots
2 tablespoons Dijon
2 tablespoons whole grain mustard
1/4 cup real maple syrup
Freshly ground black pepper and sea salt

Make the dressing ahead to let the flavors marry. Toss salad with dressing at the last minute and enjoy. Optionally add bacon.
