2 cups fresh
basil
½ cup extra
virgin olive oil
¼ lightly toasted walnuts
1 small garlic
clove grated (optional)
¾ cup grated
parmesan
Freshly ground
black pepper
For this recipe
it is important to use all the best freshest ingredients because nothing is
cooked. With a mortal and pestle or in the food processor blend together the
first 4 ingredients. Once combined add the parmesan and pepper. For storage
keep in an airtight container and add a little extra virgin olive oil on top to
keep the pesto from oxidizing.
