Roasted Acorn Squash



2 whole acorn squash
4 table spoons extra virgin olive oil
1/3 cup maple syrup
Coarse salt
Freshly ground black pepper

Quarter the squash and remove the seeds with a spoon. Lay the quarters skin side down on a cookie sheet. Drizzle with the olive oil and generously salt and pepper. Roast at 400 degrees F for 30 minutes or until soft and golden brown. Broil at the end if necessary to achieve golden brown color. Remove from the oven and drizzle with the maple syrup. If needed add additional salt and pepper. Enjoy warm.
