Baked Goat Cheese


1 log soft goat cheese
¼ cup walnuts
¼ cup almonds
2 tablespoons sugar
1 teaspoon salt


Preheat the oven to 350 degrees F. Toast the nuts in the oven until lightly golden brown, about five minutes. Finely chop the nuts or pulse in a food processor with the sugar and salt and place in a shallow bowl. Cut the goat cheese into six medallions. Press the medallions into the nut mixture so the nuts stick to all sides of the cheese. Repeat until all the cheese is gone. Place the medallions onto a cookie sheet and warm through in the oven for about five minutes. Serve on a salad or alone.
